Abstract: Selection of good quality Green- chili and Clcan properly. Cut the Chilies in pieces by cutter. After cutting pieces pour in to try for Blenching Then after Spin / Dry-up the chili pieces properly. Fill in to try for Dehydration process. After dehydration process, feed in to Pulverization — machine for powdering. Final product comes out (chili— Powder) Now we are ready for labeling, and packing as per market demand.

The invitation is Described in the following Procedure : -
• The first step to prepare Green Chilli is collection of raw / Fresh Green Chilli direct from the farmers or from the wholesale market.
• Then Green Chilli are separated by grade and is sent for cleaning or washing. After cleaning or washing the product is kept for blanching. After these prepared Green Chilli are then blanched in sodium chloride's water or treated with permitted chemicals/preservatives.
• After blanching prepared Green Chilli sent for spinning means just taking out removing water, then product is kept for cutting/ chopping.
» The procedure of chopping/cutting is followed to prepare Green
Chilli chopping and cutting is done from shredding or slicer machine. Then product kept for tray filling.
» After treys filling the product is sent for Dehydration. Dehydration
means loss of water from the Green Chilli in this method two types
drier can used. Solar drier or electrical drier. The drier is kept in 45
to 50 Degree Celsium for minimum 10 to 12 hours. The time and

temperature can very as per the requirement of the product and electric powder. Then the product sample is check by the moisture meter. Moisture meter is the machine which helps us to verify whether there is any water in the product or not. The time which the moisture machine takes is near a.bout 5 to 10 min. if there is total water loses up to 3 to 5% in the product this indicates that the product is prepared for pulverization which comes in the form of flakes. Flakes in simple term means, a small piece in varies sizes.
• When the product comes in the form of flakes the product is kept in pulverization machine. In this machine the Green Chili comes in the form of the powder.
• Alter the product is prepared it is sent for laboratory testing, if the report is positive than only the product is sent for packing, sealing and labeling. The packing is done either in bottle or pouches or a container.
• After getting powder of Green Chilly the product is packed as per the demand (i.e. 50gms, 100 gms, 200gms, 500gms & 1kg. or as per the wholesale or retailer's demand) the product is weight as per the chemical balance machine.
• And finally the Dehydrated Green Chijii powder-product is sent to market.
